The options come down to Arkansas stone, diamond or ceramic sharpeners – each of which has its own unique advantages. If you’re starting out with an especially dull blade and don’t mind paying for it, a diamond sharpener is ideal. Ceramic sharpeners are small and portable, but they should only be used to finish off a knife that’s already semi-sharp.
